Do you like Pinterest? I personally have this deep love for Pinterest. If I let myself, I could go on for hours at a time and not be bored just soaking in all the inspiration and connecting with the people behind the pins. Well, lately I’ve been tackling some of the recipes that I’ve pinned 1) because they just look amazing and 2) I want to make more of an effort to get more creative with dinner, not always cooking the same old same. With that said, I wanted to start sharing my pinterest experience with you by trying out the things on a few of my boards and giving you honest feedback. I’ll share my recipes, home decor ideas, beauty hacks and whatever else I try out from my boards!
Today, i’ll be sharing this yummy recipe for spinach lasagna roll ups. A few years ago, I went to a wedding where they served lasagna roll ups which seemed to be filled with this potato-y cheesy filling (almost like a pierogi). Well, let me tell you, it was one of the yummiest forms of pasta I ever tasted, as well as the best wedding food I ever had, next to my own wedding menu of course(biased much?) but since that day, i’ve pinned a few lasagna roll up recipes yet i’ve never gotten around to making any. Well all that changed earlier last week when I made these babies.

The recipe was orignally found on this blog called BudgetBytes.com which is run by a woman named Beth (link to the recipe listed below). She is a gal after my own heart seeing as how she lives her life in a way that allows her to enjoy good food at a very economical price! I’ve actually pinned quite a few recipes from her blog which I have yet to try, but you should definitely check her out, she has TONS of recipes which the everyday person who may not be a whiz in the kitchen can master!
I took a few pictures of the prep process, which was super easy.





Some may find it time consuming to fill and roll individual lasagna strips but I didn’t find it took that long, it was well worth whatever time it took. My boys, who apparently hate spinach, ate it up without second guessing what was the “green stuff” on the inside. My husband and mother in law loved it as well. I KNOW your family will love it as much as mine did.

I took the additional step to add some shredded mozzarella on top before placing it in the oven because more cheese never needs an explanation lol.
